PECAN TARTS

1/3 cup margarine
1/4 cup sugar
1 tsp. vanilla
1 egg yolk
1 cup flour
1/4 tsp. salt
1/2 cup sugar
1/4 cup margarine or butter, melted
2/3 cup finely chopped pecans
1 egg
1/2 tsp. vanilla

Beat together:
1/3 cup margarine or butter, 1/4 cup sugar,
and 1 tsp. vanilla in a medium bowl till fluffy.
Add egg yolk; mix well. Stir in flour and salt.
Press:
The dough into eighteen 2-inch tart
pans or twenty-four 1-3/4 inch muffin cups.
Stir together:
1/2 cup sugar and melted margarine in a bowl.
Stir in pecans, egg, and 1/2 tsp. vanilla.
Place about 2 teaspoons in each tart pan,
1 rounded teaspoon in each muffin cup.
Bake:
In a 350 degree oven 18 to 20 minutes
or till crust is golden. Cool in pans on rack
15 minutes. Remove from pans. Makes 18 to 24.
