MICROWAVE CARAMEL CORN

1 gallon popped popcorn
2 sticks butter
2 cups brown sugar
1/2 cup Karo syrup (light)
1 tsp. salt
1 tsp. vanilla
1/2 tsp. baking soda

Make up the popcorn according to
directions (I do 2 batches of 4 Tbsp.
oil with 1/2 cup popcorn).
Pour popcorn into brown grocery bag.
Set this aside and make the coating next.

Melt butter in Dutch Oven. Add
brown sugar, Karo syrup and salt.
Cook over medium heat till it comes
to a rolling boil. Continue boiling
for 3 minutes. Remove from heat and
add vanilla and baking soda. Stir
till well blended. Pour onto popcorn
in the grocery bag and stir till well coated.
Fold down top and microwave for 1 min. on high.
Open bag, stir popcorn and repeat the above.
You will microwave a total of 3-1/2 min.
by microwaving 1 min. stirring popcorn well,
then microwaving again for another minute,
ending with microwaving for 1/2 minute. Total
microwave time will be 3-1/2 minutes.
When done empty bag into a large bowl and
stir occasionally to keep it from cooling
in one large hunk.
