Date Filled Cookies

1/2 cup shortening
1 cup sugar
2 eggs
2 Tbsp. thick cream
1 tsp. vanilla
2-1/2 cups flour
1/4 tsp. soda
1/2 tsp. salt

Filling
1-1/2 cups chopped dates
1/2 cup sugar
1/2 cup water
2 Tbsp. lemon juice

Mix all of the Filling ingredients in a saucepan.
Cook slowly, stirring constantly until thickened
(about 5 minutes). Cool. For 4 dozen cookies.

Mix together shortening, sugar and eggs.
Stir in cream and vanilla. Stir in flour
soda and salt. Chill dough. Roll thin. Cut
into 3" circles. Place on lightly greased cookie
sheet. Place 1 rounded teaspoonful of cooled
filling on each. Fold over like a turn-over or
place a 2nd circle on top. Press edges with floured
tines of a fork. Bake till lightly browned.
Temp: 400 degrees for 8-10 minutes. Makes 6 doz.
