CHEESE SOUP

3 Tbsp. butter
1/4 cup flour
1/2 tsp. salt
1/8 tsp. pepper
4 cups milk
10 oz. shredded process American cheese (2-1/2) cups

Melt butter in large pan. Blend in flour,
salt and pepper. Add milk. Cook over medium
heat, stirring constantly till mixture thickens
and begins to bubble. Reduce heat, add cheese
and stir to melt. Remove from heat and serve.

Additions: 1/4 cup chopped onion - cook in
butter before adding flour, salt and pepper;

1/2 cup precooked broccoli, chopped (substitute
cooking liquid for part of milk).

Substitute: instead of milk, use chicken broth.
