Ok, first, here's a self portrait:

For those of you who havn't been privileged enough to sup at my table,
here are some recipes that have gotten a thumbs up:
1) Dutch
Apple Pie

bottom crust:
* 1 unbaked pie shell (use frozen
pie sheet dough)
filling:
*6 cups sliced raw apples (small
apples are ok)
*3/4 cup sugar
*1 teaspoon (5ml.) cinnamon
top crust:
*1 cup flour
*1/2 cup brown sugar
*1/2 cup butter or margarine (softened)
A) Mix the apples with the sugar and cinnamon.
B) Put the apple mix into the pie shell
(it will look like a small mountain,
but don't worry. When the apples are cooked, they will settle down)
C) Mix flour, brown sugar and butter.
(it will look like small crumbs)
D) Sprinkle the crumb mixture over the
apples in the pie. Cover the apples completely. LIGHTLY press down the crumbs.
E) Put aluminum foil under the pie
dish. Use alot of foil, so the pie plate is on
a wide aluminum lining. THIS IS IMPORTANT: when the pie bakes, the juice from
the apples will bubble and overflow the pie dish, it will make a TERRIBLE mess
in your oven if you don't protect under the pie dish with aluminum to catch the
juice!!)
F) Put the pie in the oven and bake at
180 degrees C. for about 45-50 minutes.
Then stick a chopstick into the pie. If the apples feel soft, you are finished.
If the apples feel uncooked, continue baking for another 15-20 minutes.
(IMPORTANT: If you notice the
top of the pie getting dark brown, put a circle of aluminum LOOSELY on top of
the pie. That will protect it from burning.)
G) When your pie is finished cooking,
take it out of the oven, and let it cool.

3) Lara's
Easy Cheesy Blintzes

Makes 5 servings
Ingredients
1 container cottage cheese
1 container jam
1 package of small spring roll (hana-maki) wrappers - 10 wrappers in
package.
2 teaspoons lemon juice
1/2 teaspoon vanilla
1 & 1/2 tablespoon sugar
1) Mix cheese, lemon juice, vanilla, and sugar.
2) Spread some plastic wrap (saran wrap)
on the table.
3) Boil water in a frying pan. Take 2
wrappers, hold them together, and dip them in the boiling water. (you may have
to turn them around, so they are completely wet, be careful - the water is hot!)
4) Put the wet wrapper on the plastic
wrap, flat.
5) Spoon about 2 tablespoons of the
cheese mix onto the wrapper and fold it up according to the directions on the
wrapper package (like a spring roll)
6) Repeat, until you have 5 of them
finished.
7) Place 1 on each dish, cover with
plastic, and chill 30 minutes.
8) After chilling the blintzes, lightly heat the jam, until it is liquid,
and spoon 2 tablespoons over each
blintz.
9) Eat.

5) Shrimp-Cucumber
Canapés

Ingredients
75g cream cheese (softened)
2 tablespoons mayonnaise
1 tablespoon ketchup
1 teaspoon prepared mustard
1 dash garlic powder (shake the bottle over the mix once)
100g cooked shrimp (chopped)
1/4 cup finely chopped cucumber (chopped very very small)
1 teaspoon finely chopped onion (chopped very very small)
(This makes about 1 & 1/4 cup spread)
1) Mix everything together.
2) Spoon mix onto Ritz crackers.
3) Garnish with extra chopped shrimp,
cucumbers, or chopped red pepper
Serve chilled

6) Machiko's
Chicken Tandoori

4-6 servings
Ingredients
4 chicken thighs (remove skin and fat)
3 tablespoons ketchup
1 cup yogurt
1 clove of garlic (shaved)
1 chunk of ginger (shaved)
1/2 teaspoon chili powder
1/2 teaspoon salt
lemon juice
1) Mix ketchup, yogurt, garlic, ginger, chili powder and salt in a bowl.
2) Let the chicken marinate in this mix
overnight in the refrigerator.
3) Pre-heat oven to 180 degrees Celsius,
and bake chicken for 15-20 minutes.
4) Squeeze 1-2 teaspoons lemon juice on
top of each piece and serve.
