Mini Cheesecakes
12 vanilla wafers
1 teaspoon vanilla extract
2 - 8 oz packages cream cheese, softened
1/2 cup sugar
2 eggs
Line mufin tins with foil liners.
Place one vanilla wafter in each liner.
Mix cream cheese, vanilla and sugar on medium speed until well blended.
Add eggs, and mix well.
Pour mixture over vanilla wafers, filling cups 3/4 full.
Bake at 325 for 25 minutes. Remove from pan when cool. Chill
Top with cherry pie filling (or the filling of your liking); if desired.
