I really do hate to cook. I have a kazillion cookbooks, boxes full of recipes, but I still never know what I am going to make for dinner. With the other kids already out of the house, there is only my husband, adult son and myself to cook for now. I don't have the slightest inclination to be a gourmet cook, but rather a short order cook. I want good food and I want it quick and easy! Sound familiar? |

Cheeseburger 'N' Fries Casserole 2 lbs of leanest ground beef (9% fat) 1 large onion, chopped 1 can mushroom soup, undiluted 1 can cheddar cheese soup, undiluted 1 cup ketchup (approximate) Enough cheese slices to cover top Salt and pepper to taste 1 pkg (20 oz) frozen crinkle-cut French fries In a skillet, brown onion and beef; Drain thoroughly. Add salt and pepper. Stir in soups. Pour into a greased 13 x 9 inch baking dish. Add ketchup on top of meat mixture. Arrange French fries on top. Bake uncovered for 30 minutes. Put the slices of cheese on top. Return to oven and bake 20-25 more minutes or until the fries are golden brown. Serves 6-8
Tuna Casserole, MY Way 3 boxes Macaroni and Cheese Small bag of frozen cut Broccoli 2 cans of tuna, drained Small box of Velveta cheese food (optional) 1 can Cheddar Cheese soup 1 can Cream Mushroom soup In large pan, cook macaroni as directed on box. While it is cooking, you can cook up the broccoli as directed on bag and drain.. Drain macaroni. Add 2 of the packages of the cheese sauces. (I use the extra one on Popcorn) Add tuna, soups, velveta cubes.Stir Well. Heat until velveta is completely melted. Add Broccoli. Stir and serve.
