Chicken Chaat
700g/1.5lbs chicken breast skinned and boned.
1 tsp salt
2-3 cloves of garlic,peeled and coarsley chopped
2 tbsps cooking oil
1.5 tsp ground coriander
0.25 tsp ground turmeric
0.25/0.50 tsp chilli powder
1.5 tbsps lemon juice
2 tbsps finely chopped coriander leaves
1.Wash the chicken and dry on absorbent
paper.Cut into 1-inch cubes

2.Add the salt to the garlic and crush to a smooth pulp.

3.Heat the oil in a frying pan,preferably non-stick or cast iron,over medium heat.

4.Add the garlic and fry until it is lightly
golden brown

5.Add the chicken and fry for 6-7 minutes
stirring constantly

6.Add the ground coriander,turmeric and chilli powder,fry for 3-4 minutes,stirring frequently.Remove from the heat and stir in the lemon juice and coriander leaves.
A very simple starter to make,you can serve this on a bed of mixed lettuce.
