Hot Chilli Chicken
This is not for the faint hearted,this fiery,hot curry is made with a spicy chilli massala sauce.
30ml / 2 tbsp tomato puree
2 garlic cloves,roughly chopped
2 green chillies,roughly chopped
5 dried red chillies
2.5ml / 0.5 tsp salt
1.5ml / 0.25 tsp sugar
5ml / 1 tsp chilli powder
2.5 ml / 0.5 tsp paprika
15ml / 1 tbsp curry paste
30ml / 2 tbsp oil
2.5ml / cumin seeds
1 onion finely chopped
2 bay leaves
5ml / 1 tsp ground coriander
5ml / 1 tsp ground cumin
1.5ml / 0.25 tsp ground turmeric
400g / 1 can of chopped tomatoes
150ml / 0.25 water
8 chicken thighs or breast(cut into pieces)
5ml / 1 tsp garam masala


1.put the tomato puree,garlic,chopped green chillies,dried red chillies,salt,sugar,chilli powder
,paprika and curry paste into a food processor
and blend until you have a smooth paste

2.Heat the oil in a large saucepan and fry the cumin seeds for about 2 mins. Add the onion and bay leaves and fry for about 5 minutes.

3.Add the chilli paste and fry for 2-3 minutes. Add the remaining ground spices and cook for 2 minutes. Add the chopped tomatoes and water. Bring to the boil and simmer for 5 minutes until the sauce thickens.

4.Add the chicken and garam masala cover and simmer for 25-30 minutes until the chicken is tender.Serve with rice and garlic naan bread.
