Onion Bhaji's
150g/6oz besan (gram or chick pea flour)
1 tsp salt or to taste
pinch of bicarbonate of soda
1 tbsp ground rice
2 tsps ground cumin
2 tsps ground coriander
0.5 - 1tsp chilli powder
1 - 2 fresh green chillies and seeded
2 large onions sliced into half rings and seperated
200ml / 7floz water
oil for deep frying.
1.sieve the flour and add the salt bicarbonateof soda,ground rice,cumin,coriander,chilli powder, and green chillies. Now mix well.

2.Now add the onions and mix thoroughly

3.gradually add the water and keep mixing
until a soft but thick batter is formed and the onions are completly coated with batter

4.Heat the oil  106deg - 180 deg c .
to test drop a tiny amount of batter into the oil.If it floats and has not turned brown then it is ready.

5.Using a tablespoon put in as many small amounts of the batter mix to make a single layer. Make sure you don't make the balls to big as this will result in the outside cooking and the center remaining uncooked.

6.Reduce the heat to low as the bhaji's need to be fried over a gentle heat to ensure that the batter in the centre cooks.This should take 10-12mins per batch.
These are great fun to make and very easy.Just remember to make sure they are cooked in the middle.
