| Beef Madras |
| 900g/2lb stewing beef 45ml / l/3 tbsp oil 1 large onion, finely chopped 4 cloves 4 green cardamon pods 2 green chillies,finely chopped 2.5cm /1 inch root ginger,finely chopped 2 garlic cloves,crushed 2 dried red chillies 15ml / 1 tbsp curry paste (madras) 10ml / 2 tsp ground coriander 5ml / 1 tsp ground cumin 2.5ml / 0.5 tsp salt 150ml / 0.25 pint of beef stock |
| 1. Remove any visible fat and cut meat into 2.5 cm / 1 inch cubes 2. Heat the oil in a large frying pan and fry the onion,cloves and cardamon pods for 5 minutes.Add the fresh green chillies,ginger,garlic and dried chillies and fry for a further 2 minutes 3. Add the curry paste and fry for 2 minutes add the beef and fry for 5-8 minutes until the meat pieces are lightly browned. 4. Add the coriander,cumin,salt and stock.Cover and simmer gently for 1-1.5hrs or until the meat is tender. |
| TOP TIP: if you have a slow cooker then simmer the curry in it. I would leave it for at least 2-3 hrs. The meat will be so tender and the flavour will be out of this world |
| This curry has quite a kick to it, to get the meat nice and tender put it in a slow cooker for a couple of hours. |
