| 1 red pepper 1 green pepper 30ml/2 tbsp cooking oil 5ml/1tsp cumin seeds 2.5ml/ 0.5 tsp fennel seeds 1 onion, cut into thick wedges 1 garlic clove, crushed 2.5ml/0.5tsp salt 1 inch of root ginger , finely chopped 1 red chilli, finely chopped 15ml/ 1 tblsp madras curry paste 675g / 1.5lbs rump or fillet steak cut into thick slices. coriander naan bread to serve. |
| 1. cut the red and green peppers into 1 inch cubes 2. heat the oil in a wok or karahi and fry the cumin and fennel seeds for about2 mins or until they begin to splutter add the onion,garlic,ginger and chilli and fry for about 5 mins. 3. add the curry paste and salt and fry for a further 3-4 mins 4. Add the peppers and stir fry for about 5 mins. Stir in the beef and continue to fry for about 10 mins or until the meat is tender. serve with warm coriander naan. |
