LIME KAFFA SALMON
& SWEET GINGER SALSA




2 mangoes OR 2 peaches ( seasonal )
2 tomatoes
4 shallots
2 teaspoons grated ginger
1 tablespoon balsamic vinegar
1 lemonsworth of juice
Salmon Steaks ( whatever )
Kaffa oil ( see step 2 )
you're going to grill this salmon , so...
you'll need to stop the salmon from
sticking to the bars. Just coat them with
veggie oil , or whip a little olive oil over
a foil covered grill tray.

STEP 1) dice mangoes , tomatoes and
shallots,..add ginger,.. vinegar..and
lemon juice. Mix these together in a bowl.
STEP2)chuck 4 dried Kaffa Lime
leaves (go to your local asian shop)
into a frypan , with a dash of olive oil
and a dash of lime juice (or lemon)
cook them on high till the leaves are
all different looking and the mix tastes
wonderfull.
STEP 3) Baste the salmon with the
Kaffa oil, and grill for no more than 3
minutes per side.
STEP 4) now everythings ready to serve
drop some salsa mix over each steak.
A good side salad for this would be a green
salad with lots of avocado mixed through
it,... and a glass of sweet white wine
like a Verdehllo(spell check) or Moselle.

*note* Kaffa Lime Leaves are that ingredient
thats missing when you try to make Thai food at home.
If you're lucky enough to have a tree in your garden
its an triffic thing.
