Cook all expensive thick steak, on very high heat for short time.
A small sprinkle of salt and pepper , and a dash of butter, will enhance the flavours. Leave it more toward rare.    A dash of wine in the pan juices will reconstiute it nicely for drizzling over.

  For all other steak,...cook lower and slower. Or stew.
