    This page is in dedication to the 6th Annual John Denver Potluck Remembrance Day Picnic Weekend.  August 12 & 13, 2005.
   Dinner at my house was fun.  We had
some good food.  We listened to the early albums of JD.  We played with my niece Sandra's puppy Monster and we took him for a walk.  Monster came back to play with his friend, our new edition to the family, Baby Shelly who turned 7 months old. 
   After being stuffed full of parsley rice,
biscuits, bbq chicken, cucumber salad and
homemade orange iced tea, we decided to
skip dessert until later.  Later came after
walking Monster and we had delicous jello
parfaits.
  Parsley rice:  1 small onion diced, 1/2 stick
of butter, 1/2 cup of parsley, 2 cups of rice
and 4 cups of water.  In a sauce pan, melt the  butter, then cook the onions with the parsley.  Put in the rice and stir well.  Cook for 2 minutes and then add the water.  Cook until the rice is tender and the water is dissolved.
 
   Homemade Orange Iced Tea:  1 cup of frozen orange juice, 1 pitcher filled with ice.  2 kettles of hot water steeped with tea bags.  Mix all ingredients together and place in the fridge until well chilled.
  Cucumber salad:  4 large cucumbers, 2 large tomatoes, 1/2 cup of mayonnaise, 1-16 oz. container of sour cream and italian seasoning.  Dice the cucumbers and tomatoes.  In a bowl, mix the dressing ingredients.  Dress the salad at the table.
BBQ Chicken:  1 large package mixed
chicken parts and 1 container of BBQ sauce. Marinate the chicken in the BBQ sauce overnight.  Cook on the grill in foil until the chicken is white.    
  Jello Parfaits:  1 case of premade jello and
whipped cream.  On a plate, using a butter
knife scoop out the jello.  Turn the jello on
its side.  Slice 1/4 inch slices.  In mugs, place
a slice of jello and some whipped cream.
Continue altering these until you reach the
top.
   On Saturday, we left early from my house
with a cooler full of soda, bottled water,
fruit, corn on the cob, my homemade
chexmix, turkey and cheese sandwiches and   baked beans.  We also had dominoes, a
croquet set, horseshoes, badmiton and cards.
We packed my karaoke machine and all of
my JD cd's plus 2 albums I only have on
cassette. On the drive to Saratoga Spa State Park, we stopped to get some ice for the cooler. 
   When we got up to the park, we found a lovely picnic spot right next to the one we
are usually at.  We had four tables for our use.  We set up 2 with the food and 2 with everything else.  Soon thereafter, I began playing rare JD songs that I had on a CD of mine.  
   Someone asked me to turn up the volume which I did, but I was not trying to drown out the park.  We ate and played dominoes.  Some of us went in the drink to cool off. We sat to relax and to eat some more.  Then we decided to play croquet.
   We had not played croquet since I am not sure when and it showed.  Balls being tapped going everywhere but where they were supposed to go.  The game took so long from start to end I needed a stand-in to finish for me. LOL :-)
   After that intense game, some of us went
back in the drink to re-cool off.  Then we
heard some drumming and thought maybe it
was kids banging on garbage can lids.  We
soon found out that it was a large Asian
family having a reunion at the park who had
decided to celebrate by playing large drums and dancing.
  We had some ooey-gooey cake and listened to some live JD albums.  Someone remarked that they were surprised at how much at ease John sounded.  I noticed that myself when I first saw him in concert back in the Summer of 1978.
   
   After this, we just sat around relaxing, talking about John and listening to his music.  It was a good day and good times had by all.  As we left, we reminisced on the good day we had.  We even told my gramps about our lovely game of croquet.  He never laughed so hard.
