Garlic Lemon Chicken
4(5 oz.) chicken breasts (boneless and skinless)
1 clove of garlic, minced
1/2 c. fat-free chicken broth
1 tbs. lemon juice


Using a nonstick pan sprayed with cooking spray, slowly saute the garlic over low heat. Add the chicken and cook over medium heat until brown on both sides (about 10 min.) Add broth and lemon juice and heat to boiling and then reduce heat. Cover and let simmer 10-15 minutes or until the chicken is done. Remove the chicken, wrap to keep warm. Then cook or reduce the remaining liquid in pan for about 3 mintues. Pour over chicken and serve. Serves 4.

Breakfast Nuggets
l/2 lb mild pork sausage (or ground ham), uncooked.
l/2 lb Sharp cheddar cheese (grated)
l l/2 cups baking mix (like Bisquick)

Using your hands -- cover with plastic bags if you are fussy - mix lst two ingred. When well mixed -- mix in the baking mix. Mix WELL Shape into l inch balls-- place on baking sheet --- 375 degree oven for l0 minutes or until brown. Serve warm. Makes maybe 40 balls. **I make these --- toss a few in a paper towel or such and warm up for maybe l0 sec. in microwave for a fast breakfast to eat enroute to wherever. Also can be used with picks for a snack for company if warm.

Goofy burgers!
one lb. of lean ground beef (Not greasy beef)

Brown with a chopped up onion. Add one can of Chicken Gumbo Soup. Do not delute soup. Simmer slowly and add 3 tbls of catsup and 2 or 3 tbls of creamy mustard. Simmer slowly. Spoon onto toasted buns. **(My guys and their friends liked this years ago --- simple but good)
