Potato Soup
6 medium-sized red potatoes
1 quart milk
1 small onion grated
1 tablespoon of Kosher or sea salt
2 tablespoons butter

Peel and dice 4 of the potatoes and place them in a large stock pot with just enough water to cover them.  Add salt and cook on high heat.  When the potatoes are soft, mash them down or put them through a blender - do not drain off the water.  Add milk, onion, and butter and simmer until hot.  Do not boil.

Leaving the skin on the remaining 2 potatoes, dice them and transfer them to a small pot.  Add enough water to barely cover them and cook until soft.  Add to the soup.  Salt and pepper to taste.
