Grandma Morgan's Apple Crisp
3 C. Apples    1 T. flour
1 C. sugar      1 tsp. cinnemon

TOPPING:
3/4 C. brown sugar                 1/4 tsp. baking powder
3/4 C. flour                            1/4 tsp. baking soda
3/4 C. oatmeal                        1 tsp. cinnemon
3/4 C. soft margarine/butter

Mix the apples, sugar, cinnemon, and flour and put them in a 9x13-inch cake pan.  Combine remaining ingredients and put on top of apple mixture.  Bake at 350 degrees for 45-60 minutes.

Pumpkin Brownie Bars
1 C. cooking oil (or 3/4 C. melted butter)    1/2 tsp.cloves
2 C. sugar                                                 2 tsp. cinnemon
4 eggs                                                       1 tsp. salt
1 (#303) can pumpkin                                1 tsp. soda
2 C. flour                                                  2 tsp. baking powder

FROSTING:
6 oz. cream cheese (soft)                            2 tsp. vanilla
1 stick butter (soft)                                     3 C. powdered sugar
2 tsp. milk

Blend cooking oil, eggs, and sugar until creamy.  Add all remaining ingredients and mix together.  Pour into greased jelly roll pan and bake at 350 degrees for 20-25 minutes.  For frosting:  Mix all ingredients well with hand mixer.  Put on cooled pumpkin brownies.
Peanut Brittle (microwave)
1 C. sugar                                      1 tsp. vanilla (have ready)
1/2 C. light corn syrup                    1 tbsp. butter (have ready)
dash of salt                                    1 1/2 tsp. baking soda (have ready)
1 C. shelled raw peanuts

Grease baking sheet heavily (I spray).  Combine sugar, corn syrup, and salt in 3 quart glass casserole dish.  Stir in peanuts and microwave on high (100%) for eight to ten minutes.  Stir once or twice. 

Stir in vanilla, butter, and soda (will foam!).  Spread out quickly on a cookie sheet or large area.  Cool.  Break into pieces and enjoy!
