Thumbprint Cookies
1/4 C. soft shortening                      1/4 C. brown sugar
1/4 C. butter                                   1/2 tsp. vanilla

Mix all of the ingredients listed above well.  Then add....

1 C. flour                                      1/4 tsp. salt

Later you will need....

3/4 C. chopped nuts                        1 slightly beated egg white

Roll dough into 1 inch balls.  Dip into slightly beated egg whites.  Roll in finely chopped nuts (3/4 cup).  Place about 1 inch apart on engrossed cookie sheet and press thumb into the middle of each cookie.  Bake at 375 until set (10-12 minutes).  Cool and frost or top with candied fruit or jelly.

NOTE:  I usually quadruple this recipe.  Since the cookies to not spread (no baking soda/baking powder) you can fit a lot of cookies on one cookie sheet when baking!  Makes 7-8 dozen cookies when quadrupled.
