Beltaine Lovers Coffee Cake

"A perfect handfasting of fruits"
Filling: 3 cups rhubarb cut into 1/2 inch pieces (masculine, tart strong flavour, deep red colour when cooked) 16 oz (or 1 quart) fresh strawberries (feminine, gentle sweet flavour, the perfect softening compliment for the masculine element, bright red colour when cooked) 2 tblsp lemon juice Stir together, cover and simmer about 5 mins 1 cup sugar 1/2 cup cornstarch Mix together, stir into strawberry/rhubarb mixture simmer 5 more minutes til thick and bubbly. Cool
The Cake Bed

In a large mixing bowl stir together: 3 cups flour 1cup sugar 1 tsp salt 1 tsp baking soda Cut in 1 cup butter til mixture resembles fine crumbs In a separate bowl stir together: 1 cup buttermilk 2 slightly beaten eggs 1 tsp vanilla Pour liquids into the dry ingredients, stir just until moistened, Spread half the batter in a greased 13x9x2 baking pan Spread cooled strawberry/rhubarb lovers on the bed of batter Spoon remaining batter in small mounds atop the fruit lovers. Combine 3/4 cup sugar, 1/2 cup flour, cut in 1/4 cup butter til mixture resembles fine crumbs. Sprinkle the crumb mixture over the lover's bed. Bake at 350 degrees for 40-45 mins 1
