| Irish cooking is simple. Their principle foods include beef, chicken, bread, fruit, mutton, pork, potatoes, and other vegetables. Potatoes have been an important food in Ireland for hundreds of years. Irish stew is one of Ireland's most famous dishes. It is made by boiling layers of potatoes, onions, and pieces of mutton in a covered pot. Boiled salt pork, cabbage, and potatoes is another traditional dish made in Ireland. |
| Ireland is known for its famous writers. The Irish Literacy Revival was a period during the late 1800s and early 1900s in which many of Ireland's greatest writers lived. Some of the authors include: James Joyce, George Augustus Moore, George Russell, George Bernard Shaw, and William Butler Yeats. |

| The constant shifting of population through migration and invasions are revealed in the early history of Irish dance. Each culture that migrated into Ireland brought their own styles of dance. The Druids danced in religious rituals honoring the oak tree and the sun. Over 2000 years ago the Celts arrived in Ireland from central Europe and brought with them their own folk dances. |

| Norman customs and culture were brought to Ireland after the Anglo-Norman conquest in the twelfth century. A popular Norman dance was the Carol. While performed in conquered Irish towns, the leader sang and was surrounded by a circle of dancers who replied with the same song. A more recent style of Irish dancing includes Riverdance and Lord of the Dance, which have given Irish dancing an international fame. Dancing is still a regular part of social functions in Ireland. Today, there are many organizations that promote Irish dance. One of these organizations includes the Feis. Children, teenagers, and adults compete in separate competitions for Feis titles and prizes. |

| Recipe for Irish Stew- serves 4 |
| 2 1/2 lb boned mutton 4 large potatoes 2 large onions 3 or 4 medium carrots sprig of parsley 2 cups of water salt and pepper |
| Cut meat into good size chunks. Peel the vegetables and slice thickly. Chop the parsley. Choose a pot with a well-fitting lid and put in the ingredients in layers, starting and finishing with potatoes. Pour in the water and season to taste. Cover amd put on a very low heat for about 2 1/2 hours until the meat is tender and the potatoes have thickened the liquid. The dish may also be made with lamb, in which case it requires only 1 1/2 hours cooking time. |

| Recipe for corned beef and cabbage- serves 4 to 6 |
| 5 lb of corned beef 1 large cabbage Bay leaf 2 large onions |
| Quarter the cabbage and put aside. Peel and slice the other vegetables. Cover the meat with the water and bring to a boil. Skim the surface, add the vegetables (except the cabbage), the bay leaf and the pepper and simmer gently for 20 minutes. Add the cabbage and cook for thirty more minutes. Serve the meat surrounded by the vegetables with additional mashed potatoes. |
