IRISH OATCAKES






Ingredients

3 cups of Oatmeal Flour
1 stick of butter (or margarine)
� teaspoon salt
� teaspoon baking soda
1/3 cup of water


Method

Preheat oven to 350 degrees celsius. Mix together 2 cups of oatmeal with the salt and the baking soda.
Melt the butter and add the water. Stir the butter and water mixture into the oat mixture and blend until you have a dough.

Sprinkle your work surface with the remaining oatmeal and turn the dough into it. Flatten the dough with your hands and roll out with a rolling pin until about 1/4 inch thick.

Use very small cookie-cutter or cut into small squares and place on an ungreased baking sheet. Bake in the oven for about twenty minutes, then lower the heat to 300 degrees celsius and toast until light brown.
