HEARTH CAKES
Ingredients
2 cups of Self-Raising Flour
2 cups of Currants (or sultana�s)
1 egg
200 grams Butter (or margarine)
1 cup caster sugar
1 teaspoon of Vanilla Essence
Method
In a large mixing bowl combine all the ingredients and mix them together with your hands
Roll the mixture out flat and cut it into round circle.
Heat the frying pan, melt a teaspoonful of Butter or margarine and cook them on a low heat for about two or three minutes into light brown; then turn them over and cook again until light brown.
They will last up to a month in a sealed container.
