Fried Rice
1/2 cup
diced fully cooked ham
1/4 cup
finely chopped fresh mushrooms
1/4 cup
thinly sliced green onion
1/2 to 1 tsp
grated ginger root
In a large skillet heat 1 tbsp of the oil over medium heat.
Scramble eggs.
In the skillet heat the remaining oil over medium heat.
Cook ham, mushrooms, onion, ginger root, and red pepper in the hot oil for 3 mins.
Stir in cooked rice and egg; sprinkle with soy sauce and 1 tbsp water.
Cook for 3 to 5 mins or till heated through, tossing gently to coat with soy sauce.
Serves 4.
