SPANISH RICE

Ingredients:

14 oz. stewed tomatoes
1 1/3 tablespoon oil
2 2/3 cups rice
4 cups water
4 green onions
2/3 can of black olives
1/3 tsp. garlic powder
1/3 tsp. pepper
pinch salt
4 slices bacon; fried crisp and crumbled.

Directions:

Saute' rice in oil over medium heat until each grain of rice is slightly browned. Add pepper and green onions and saute' until tender, about one minute. Add tomatoes, water, olives, bacon, garlic and salt. Bring to boil, stirring to mix spices. Cover at low heat 30 minutes. Fluff and serve.
Makes 8 1 cup servings.
