POTATO CHIP COOKIES

Prheat 350 degrees
Ingredients:
1 cup margarine at room temperature
1/2 c. sugar
1 1/2 c. flour
1 teaspoon vanilla
1/2 to 3/4 c. crushed potato chips
Cream the margarine and sugar together and add vanilla. Work
in the flour and fold in the chips.
This batter does not 'run' so you can place several on a cookie
sheet. I liked mine better using a plain old sheet, not the
airbake. Also, I use my 1 1/2" ice cream scoop and this
requires about 23 min. If you do the heaping teaspoon check at
15 minutes. Dust with powder sugar. I can also see dusting
them with a sugar/cinnamon blend. It is a surprisingly GOOD
cookie, much like the mexican wedding recipe.A lady came from
Germany in the late 50's and says it is an English recipe.
Quite a surprise and few ever guess what the crunch is......
