PEACH MELBA

Ingredients:

4 Peaches, ripe
2 tb Lemon juice
2 c Raspberries, fresh
2 tb Sugar, extrafine
1 ts Vanilla
2 c Nonfat vanilla yogurt, frozen

Directions:

Remove skin from peaches using a swivel blade peeler. Cut peaches in half, remove stones. Sprinkle with lemon juice. Set aside. Mash berries, add sugar and vanilla. Place 2 peach halves in each dessert dish. Top with 1/2 c. frozen yogurt and 1/4 of raspberry sauce.
