Belted Galloway Carcasses

Because of the thick hair coat the Belted Galloway does not need to put on a thick layer of fat to protect it from the weather.

The following letter from a butcher says it all

To whom it may concern Re Belted Galloway Cattle

In September of this year, I bought several Belted Galloways from Mr. Stan Robinson of "Cumbria", Middle Creek. I found that these steers yielded a dressed weight ratio of 55% of live weight, averaged over 12 steers. The average fat depth was approximately 4mm., giving them a very low wastage factor, I recieved many comments from my customers on how tender and tasty it was. I have been butchering for 27 years and would have to say that the Galloways are probably the best beef that I have sold in that time.

The above steers were 14 - 16 months of age.

The dressing % were taken from weighing a with a full gut 48 hours before slaughter.
