On Sunday, October 20th, 2002, the Carl Sandburg College Upward Bound Program hosted its annual Fall Banquet. This year the banquet was held at the Cherry St. Brewing Co., which is located in downtown Galesburg. The evening consisted of a sit-down dinner followed by a brief message from our guest speaker Randy, the restaurant manager. You may be wondering why the restaurant manager spoke with us? Well, Randy was an Upward Bound participant back when he was in high school some years ago. He still credits to this day the influence that Upward Bound and its staff had upon his life. Randy described himself as an average student with not much interest in school. But once he got into Upward Bound, he found himself motivated and doing things that he never thought of doing. At one point, he was a personal chef to a U.S. ambassador and found himself cooking dinner for the U.S. Secretary of State. Randy then went on to college and got his degree in culinary arts. From that point on, he worked in various restaurants and locations and ended up moving to the Galesburg area after meeting and marrying his current wife, who was originally from Galesburg. Randy couldn't say enough about his experiences with Upward Bound and he encouraged all of the students in attendance to take advantage of the program and all of its opportunities.
In case you were wondering, dinner started out with a salad consisting of various greens, which were coated by a rasberry vinaigrette. Following the salad, we were served a lime sorbet to cleanse our palette. Next came the main course. Dinner guests had the option of choosing 1 of the 3 meals available that night. One meal consisted of prime rib, mashed potatoes, mixed vegetables, and bread. The second choice consisted of chicken cordon blue, mashed potatoes, mixed vegetables, and bread. And the final choice for dinner was a grilled portabella mushroom, mashed potatoes, mixed vegetables, and bread.
