Cookie Pizza

2 rolls of sugar cookie premade dough
8 oz container of Whip Cream
8 oz pkg or cream cheese softened

or use vanilla yogurt instead of the cream cheese and whip cream mixture!!
3 kiwi
1 pound strawberries
2 banana

Flatten cookie dough onto sheet pan.  Bake till lighly brown following package recommendations.
Let cool.  Slice up strawberries and peel kiwi fruit.  Take cream cheese and whip cream and mix together.
Spread on the cookie dough.  Place kiwi slices and strawberry, bananas on topping.
Veggie stir fry

1/2 package of bacon cut in small pieces
2 green squash
2 yellow squash
1 TBS Garlic chopped
1 medium onion
1/2 large Green Pepper
3 Carrots julienned
1/2 head of Broccoli
1 cup of sliced mushrooms
3 TBS of Soy Sauce , Terriaki Sauce, or Worchestershire sauce
8 slices of processed cheese
Rice or Egg Noodles

fry bacon drain off all but about 3 TBS of the grease.
sautee the garlic and onions, add the carrots and the squash, peppers, and the brocolli.   fry for about 5 mins then cover and steam. Add the sauce of choice.  Cover with the cheese and serve on the rice or noodles.

Country Fried Venison

1 c flour
1 pound venison meat
1 cup red wine vinegar
1/2 medium onion diced
3 garlic cloves minced or 1/2 T from jar
1/4 t salt  
1/4 t pepper

Cut venison in small peices 3 x 4" or small strips.   Tenderize with meat (hammer) and set aside.  Using a large ziplock bag pour vinegar, onion, garlic, salt nd pepper in to bag.  Add the meat.

Marinate for at least an hour.

Remove from bag and putting flour on a plate coat meat in flour and fry till golden brown.  Use bacon grease or butter for frying as venison has little fat on it.

Serve with brown gravy and rice....makes a good dinna!!!
Fish Fry

My basic recipe:

3 T Mustard
1/4 water
1 cup corn meal
1 cup flour
salt
lemon pepper
Fresh Lemon

Mix flour and corn meal together in a bag
Mix water and mustard in a bowl
using  enough water to just slightly loosen the mustard
Season fish pieces with salt and lemon pepper.
Fry in oil till golden and squeeze on that lemon juice...yummy
Most fish can be used in this recipe.  We used speckled perch, blue gill, or ctfish.  It is especially good for cat fish as it takes the dirt taste out of the meat.  I have two other recipes for salt water fish.....
For Saltwater fish

Broiling with garlic butter and lemon juice is the best way to cook them....Broil till tender and almost falling apart.


Kingfish

I wrap in bacon and secure with a toothpick.   Grill till almost done then smother in your favorite barbaque sauce...

You would almost think you were eating chicken.  This way is good for other types of fish that are very strong tasting or if you really dont care for the taste of fish that well.
Shepherd's Pie

1 pound ground beef

Mashed potatoes:
{6 large potatoes}
{1 c milk}
{1/2 c marg or butter}

1/2 pound bacon
1 lg can corn
2 cups shredded cheddar

Boil potatoes till soft, drain, add milk, butter, (or use 3 cups of prepared dehydrated potatoes). Brown the ground beef and the bacon together. Remove the bacon and drain. Cut in 2 inch pieces. Set Aside. In large flat baking dish (9"x9" or bigger) put ground beef (drained) on the bottom, Layer with the potatoes, corn bacon, cheese.  Bake at 350 degrees till cheese is melted.

Pork Chops ala critter...lol

4 medium sized porkchops
1 Medium onion
4 stalks of celery
3 garlic cloves
1/2 t seasoning salt
1/4 c margerine

Box Pork flavored stuffing
Apple sauce (of course)

Wash and tenderize porkchops, seasoning both sides with seasoning salt. Mince garlic, dice onion, and cut celery into 1/4 inch slices.  In a skillet melt butter and brown garlic, add onions and the celery.  Cook pork chops till the juice runs clear. Serve with stuffing and applesauce and the sauteed veggies....
Goulash (or macaroni and tomatoes as we used to call it)

3 cups dry macaroni
2 medium sized cans tomato sauce
1/2 t oregano
1 t fresh garlic of 1/2 t garlic salt or powder
1/4 stick of butter

Cook and drain macaroni.  Add butter, seasonings and tomato sauce. Heat.
Variations can include 1 pound ground beef browned and drained..

The next night??/ Dump back in pan add 6 cups water and 2 more medium cans of
Tomato sauce...now call it
Minestrone soup..:) Enjoy!!!

Add fav veggies, too, makes a good filler and a cheap meal for a tight budget...
Salmon Patties

I can salmon
1 sleeve of saltine crackers
2 eggs
1/2 t lemon pepper
lemon juice for serving...

Open and drain salmon.  In a medium bowl pinch the bones down fine and the meat mixed well.  Add eggs. In another bowl crush crackers fine or use 1 1/2 c bread crumbs.  Mix crackers into salmon and make medium sized patties.  Fry @ 300* till lightly browned on both sides.

Cluckettos......
( A Farm Basket Goodie...from a small chicken chain in Vegas)

1 package taquitos (grocers freezer section should have them)
1 cup salsa
1 cup shredded lettuce
1 cup shredded cheddar cheese

In a skillet heat oil to 325*.  Fry taquitos (3 per serving) till lightly brown and crispy.
On a plate put 1/2 of the lettuce. Lay taquitos down and layer with more lettuce, cheese,
and a couple tablespoons of the salsa.

Enjoy!! This is one of my favorite lunches!!!!
Salads:
Potato Salad
4 large potatoes diced and boiled to soft but not mushy
3 boiled eggs diced
1 medium onion diced
3 stalks celery diced
2 cloves of garlic finely chopped
1 large green pepper diced
1 cucumber diced
3/4 cup mayonaise
1/4 cup mustard
salt and pepper to taste


optional:
Remove the items your family doesnt care for...lol

1/2 c pickle relish

Cool down the potatoes and eggs in runnning cold water...
mix the vegetables then the rest of the ingredients.

Serve hot or cold.



Pasta Salad

1/2 Box Rainbow twists rotini pasta noodles cooked to package directions, drained, and cooled.
1/2 small onion diced
1/2 green pepper diced
3 cloves of garlic
1/2 teaspoon italian seasoning
1/4 teaspoon oregano
1/4 cup olive or vegetable oil
1/8 cup red wine vinegar
Salt / Pepper to taste

MIx well...Chill....enjoy...

Tossed Salad...Romaine Lettuce, Sliced Tomatoes, cucumbers.....
Assorted favorite dressings
Cottage cheese
Potato salad
Pasta salad
Chopped ham or meat appropriate for salads
Black or Green olives
Shredded favorite cheese
Load up the plates and dig in!!!
