SALADS
                                 Frog Eye Salad

1 Cup Sugar                                       1 3/4 Cup pineapple juice
2 Tlbs. Flour                                      2 eggs, beaten
dash salt                                            1 Tbls. Lemon juice

Cook, stirring until thickened. 
Cool to room temperature. 

3 quarts water                                   1 Tbls. Cooking oil
1 16 oz. Pkg Acini de pepe (macaroni product) 

Cook until Acini de pepe is done. Drain, rinse, 
drain, cool. Combine egg mixture and Acini de pepe 
Refrigerate overnight. Add the following: 

3 cans drained mandarin oranges 
2 16 oz. Cans pineapple chunks 
1 10 oz. Can crushed pineapple drained 
2 8 oz. Cool Whip 
1 Cup miniature marshmallows 
1 Cup coconut (opt- but good) 

25 servings--Easily cut in half..
CHICKEN DIP---i swear by this one hun!

1 can of white chunk chicken in water drain
1 8oz cream cheese
1 HEAPING tbsp mayonaise
1/4 tsp garlic powder or garlic salt
1/4 tsp lemon pepper
1 tbsp spicy season all
1/4 tsp onion powder

mix all ingredients in a bowl with spoon. will be able to serve in a rounded ball with less may-in a small dip bowl with more mayo. consistency will vary. serve with crackers, breads, or as spread for sandwiches!

it's always a big hit at our get togethers honey!
          Special Salad

1 bag of romaine salad  ( or the spring salad mix is great also)
1 c. shredded Swiss Cheese
1 medium red apple chopped
1 medium green pear chopped
1/2 c. dried cranberries
1/2 -1c. chopped cashews  (I used salted sunflower seeds and they are just as good)

Toss with dressing made in blender
1/2c.sugar
1/3 c. cider vinegar   (wine or white)
2T. lemon juice
2T. finely chopped onion or scallions
salt
2/3 c. vegetable oil
When blender  together add 2-3  t. poppy seeds
This is a yummy salad

Spinach-Apricot Salad

1 bag of baby leaf spinach  (or romaine)
3/4 c. macadamia nuts  cut
1 (6oz) package of dried apricots chopped

Dressing
3 T.apricot preserves
3 T. orange juice
3 T. cider vinegar
1/2 cup vegetable oil
Place in blender

You could also add chicken for a chicken salad
We LOVE this one and it is so easy to make at the last moment

           CRANBERRY ORANGE DREAM

Prep: 25 mins.  Refrigerate: 4 hrs. 15 min.  Makes: 16 Servings

Stir 1 1/2 cups boiling water into 1 package (6 oz. size) or 2 packages (3 oz. size each) JELL-O Brand Cranberry Flavor Gelatin in large bowl at least 2 mins. until compleetely dissolved.  Stir in 1 can (16 oz.) whole berry cranberry sauce until melted.  Stir in 1 1/2 cups cold water.  Refrigerate about 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites).  Gently stir in l can (11 or 15 oz.) DOLE Mandarin Oranges, drained.

Meanwhile, stir together 1 1/2 cups graham cracker crumbs, 1/4 cups sugar and 1/2 cup (1 stick) melted butter or margarine in a 13 x 9 inch dish.  Press firmly onto bottom.  Refrigerate until ready to fill.

Beat 1 package (8 oz.) COOL WHIP whipped Topping, thawed.  Spread evenly over crust.  Spoon gelatin mixture over cream cheese layer.

Refrigerate 3 hours or until firm.  Garnish with additional whipped topping, if desired.
ORANGE BUTTERMILK SALAD

1 CAN 20oz CRUSHED PINEAPPLE (UNDRAINED)
1 PKG (6 oz) ORANGE FLAVORED JELLO
2 CUPS BUTTERMILK
1 CARTON (8oz) COOL WHIP (THAWED)

IN A SAUCEPAN, BRING PINEAPPLE TO BOIL.
REMOVE FROM HEAT; ADD JELLO & STIR TO
DISSOLVE. ADD BUTTERMILK & MIX WELL. COOL
TO ROOM TEMPERATURE. FOLD IN COOL WHIP.
POUR IN 11X 7 X 2" DISH. REFRIGERATE SEVERAL
HOURS OR OVERNIGHT. CUT INTO SQUARES.
YIELD: 12 SQUARES
ORIENTAL CHICKEN SALAD

Ready in 1 hour or less

1/2 Cup sugar
1 Tlbs cornstarch
1/4 Cup water
1/4 Cup vegetable oil
1/4 Cup ketchup
3 Tlbs cider vinegar
1 Tlbs soy sauce
1 medium head iceberg lettuce, torn
2 Cups cubed cooked chicken
1 Cup salted cashews
1 can (8 oz) sliced water chestnuts, drained
1 package (6 oz) frozen snow peas, thawed
1 can (3 oz) chow mein noodles
1/4 cup chopped green onions

In a small saucepan, combine the first
seven ingredients. Bring to a boil; cook
and stir for 2 minutes or until thickened.
Cool. In a large salad bowl, combine the
remaining ingredients; add dressing
and toss to coat. Serve immediately.
Yield: 8-10 servings
Banana Salad

1 sm. pkg. instant banana
cream pudding
1 Cup milk
1 sm. can mandarin oranges, drained
3 bananas, sliced
1 Cup miniature marshmallows
1 (8 oz.) carton Cool Whip

Beat together pudding and milk. Let set 10 minutes. 
Add remaining ingredients. Mix and refrigerate several hours
before serving. Can top with walnuts, if desired
