Spicy Thai Pork Lo Mein
Prep time: 25 minutes
| 3 boneless pork loin chops, trimmed of fat, cut into �" pieces |
2 (1 lb. 5 oz.) pkg. Creat a Meal! Stir Fry Meal Starter |
3 tbsp. peanut butter |
| 2 tbsp. lime juice |
2 to 4 tsp. chili puree with garlic |

- Spray 12" nonstick skillet or wok with nonstick cooking spray. Heat over medium-high heat until hot. Add pork; cook and stir 5 minutes. Add frozen vegetables with noodles and sauce from packets. Reduce heat to medium; cover and cook 7 to 10 minutes or until vegetables are crisp-tender and pork is no longer pink, stirring frequently.
- Meanwhile, in small bowl, combine peanut butter, lime juice and chili puree, blend well.
- Add peanut butter mixture to skillet; cook and stir until thoroughly heated.
4 (1� cup) servings
Ingredient substitutions:
Pork tenderloin or pork sirloin can be used in place of the loin chops. Use one pound of boneless pork.
Two to four teaspoons of chili sauce, plus � teaspoon of minced dried garlic and � teaspoon of crushed red pepper flakes can be used in place of the chile puree with garlic.
Kitchen tip:
To get the most juice from citrus fruit, bring the fruit to room temperature. Cold fruit can be warmed in the microwave for 20 to 30 seconds before juicing. Before slicing the fruit, roll it back and forth on the counter, pressing as you roll.
