Pork And Sweet Potato Harvest Supper

Prep time: 30 minutes

2 tbsp. butter or margarine 1 lb. boneless pork, cut into thin bite-sized strips 3 cups cut cabbage (1" pieces)
2 med. or 1 lg. dark orange sweet potato, peeled, halved and sliced (3 cups) 2 med. apples, peeled, sliced 1 tsp. Caribbean or Jamaican jerk seasoning
� cup Hungry Jack Microwave Ready Regular Syrup

  1. Melt butter in large skillet over medium-high heat. Add pork strips; cook and stir 5 to 7 minutes or until lightly browned and no longer pink.
  2. Reduce heat to medium. Add cabbage, sweet potatoes, apples and jerk seasoning; stir gently to mix. Cover; cook 8 to 10 minutes or until vegetables are tender, stirring occasionally. Add syrup; stir gently to mix.

For the best color, use deep orange sweet potatoes.

Jerk seasoning is a dry seasoning that originated in Jamaica. Used on grilled meats, jerk seasoning blends chiles, garlic, onion, thyme cinnamon, cloves, ginger and allspice. This combination of sweet, hot and spicy flavors adds a Caribbean touch to meat, poultry and vegetables.

Slice a pound of pork tenderloin or trimmed boneless chops for the boneless pork in this recipe.
