Ham And Veggie Strata
Prep time: 30 minutes (Ready in 7 hours 30 minutes)
| 2 tbsp. olive oil |
1 lg. onion, chopped |
1 med. bell pepper, chopped |
| 1 tbsp. minced garlic |
1 (8 oz.) pkg. sliced cooked ham, cut into small pieces |
3 med. tomatoes, seeded, chopped |
| 12 slices (about 1� lb.) day old English muffin or sourdough bread, torn into pieces |
8 eggs |
3 cups milk |
| 1 � tsp. salt |
� tsp. pepper |
4 oz. (1 cup) shredded Cheddar cheese |

- Heat oil in 12" nonstick skillet over medium heat until hot. Add onion, bell pepper and garlic; cook 6 to 8 minutes or until tender. Stir in ham. Add tomatoes; cook an additional 2 minutes.
- Spray 13 x 9" baking dish with nonstick cooking spray. Place torn bread in dish. Top with ham mixture.
- In large bowl, combine eggs, milk, salt and pepper; beat well. Pour over mixture in baking dish. Cover; refrigerate at least 6 hours or overnight.
- Heat oven to 350�. Bake strata 30 minutes. Sprinkle with cheese; bake an additional 30 minutes or until knife inserted in center comes out clean.

Ingredient info:
Heirloom tomatoes are grown from varieties that have been cultivated for years; their wonderful flavor isn't present in modern hybrid tomatoes. Look for heirloom tomatoes at farmer's markets and roadside stands.
Ingredient substitution:
Turkey ham or smoked turkey can be substituted for the ham.
Healthy hint:
Tomatoes and green bell pepper in this strata recipe boost its vitamin C and A content. The calcium contained in the cheese, milk and English muffin bread makes one serving of this recipe an excellent source of calcium.
