Cajun Beans And Rice Supper

Prep time: 30 minutes

1 tbsp. olive or vegetable oil 1 med. zucchini, chopped � cup chopped green bell pepper
1 pkg. red beans and rice mix water 1 med. tomato, chopped

  1. Heat oil in large skillet over medium heat until hot. Add zucchini and bell pepper; cook and stir 2 to 3 minutes or until crisp-tender. Remove vegetables from skillet; cover to keep warm.
  2. In same skillet, combine rice mix with any seasonings and amount of water called for on package. Bring to a boil. Reduce heat to low; cover and simmer 15 minutes.
  3. Add zucchini mixture and tomato; stir gently to mix. Cover; cook 3 to 5 minutes or until thoroughly heated.

3 (1� cup) servings

There are several brands of beans and rice mixes to choose from; adjust the water to match the directions on the package you purchase.

Serving suggestion:
For a Cajun-style dinner, prepare corn biscuits and a tossed green salad.
