Taco Skillet Dinner
Prep time: 25 minutes
| 1 lb. lean ground beef |
1 pkg. Old El Paso Taco Seasoning Mix |
2� cups water |
| 2 cups uncooked elbow macaroni |
1 cup shredded Cheddar cheese |
2 green onions, sliced |
| � cup sour cream |
1 med. tomato, chopped |

- Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.
- Add taco seasoning mix, water and macaroni; mix well. Bring to a boil; stir. Reduce heat to medium-low; cover and cook 8 to 10 minutes or until macaroni is of desired doneness, stirring occasionally.
- Sprinkle with cheese and onions. Top with sour cream. Sprinkle with tomato.
4 (1� cup) servings
Ingredient substitution:
Small shell pasta can be used in the place of elbow macaroni.
Just for kids:
Pass the toppings in individual dishes so everyone can garnish the casserole with their favorites.
Serving suggestion:
Serve this casserole on a bed of taco chips, or crush some chips to pass along with the other toppings.
