Meatballs And Rice Skillet Dinner
Prep time: 30 minutes
| 1 tbsp. margarine or butter |
1 (8 oz.) pkg. beef Rice-A-Roni |
2 1/3 cups water |
| 16 frozen cooked meatballs |
2 cups frozen chopped broccoli, thawed |
� cup red bell pepper strips |

- Melt margarine in large skillet over medium heat. Add rice mix; cook and stir until lightly browned. Add water, contents of seasoning packet and meatballs. Bring to a boil. Stir; reduce heat to medium-low. Cover; cook for 15 minutes.
- Add broccoli and bell pepper to skillet. Cover; cook over medium heat for 7 to 9 minutes. Stir to fluff rice before serving.
3 (1� cup) servings
Ingredient substitution:
Use pre-cooked turkey breast cut up into cubes instead of the meatballs. And use the chicken flavored rice instead of the beef. It makes a nice change of pace.
Microwave option:
To thaw frozen broccoli, place it in a microwave safe dish and microwave on high for 1 to 2 minutes.
Serving suggestion:
For an easy meal, serve with French bread and a fruit salad.
