| Blueberry-Orange Bread 2 1/2 cup flour, sifted 1 cup blueberries tossed in 1/4 cup flour 1 tbsp baking powder 3 eggs 1/2 tsp baking soda 1/2 cup milk 1/2 cup sugar 1/2 cup butter, melted 1/3 cup orange juice Toppng 1/4 cup orange juice 3 tbsp sugar Preheat oven to 350 Sift together the flour, baking powder, soda and sugar. Add the blueberries. In separate bowl beat eggs, milk, butter and juice. Add the liquid into the dry ingredients and stir by hand just to mix.Bake 1 hour. Spoon the topping across the top. Strawberrry Bread 1 1/2 cups flour 2 eggs 1/2 tsp baking soda 2/3 cup brown sugar 1/2 tsp salt 1/2 cup oil 1 tsp cinnamon 1 cup chopped strawberries Preheat the oven to 350 Sift the flour, soda, salt and cinnamon. In a separate bowl beat the eggs. Add sugar and oil. Mix by hand with the dry ingredients. Do not overmix. Add the strawberries. Pour into greased pan and bake for 1 hour. Fresh Apple Bread 2 cups flour 2/3 cup sugar 2 tsp baking powder 2 eggs 3/4 tsp cinnamon 1 1/2 cups peeled, greated apples 1/2 cup butter 1/2 cup chocolate chips Preheat the oven to 350 Sift the flour, baking powder and cinnamon. Set aside. Cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, beating well after each addition. Stir in the dry ingredients and the greated apples . Fold in the chocolate chips. Bake for 1 hour. Banana - Chocolate Bread 2 cups flour 1/3 cup butter, softened 1 tsp baking powder 2 eggs 1/2 tsp baking soda 3 tbsp sour milk 1/2 tsp salt 1 cup mashed bananas 2/3 cup sugar 1/2 cup chocolate chips Preheat the oven to 350 Sift the flour, baking powder, baking soda and salt. Set aside. Cream the sugar with the butter. Beat in eggs, one at a time. Stir in the sour milk and banana. Mix in the dry ingredients. Fold in the chocolate chips. Pour into loaf pan and allow to stand at room temperature for 20 min. Bake for 45-55 min. Pineapple - Coconut Bread 3 cups flour 1/2 cup honey 1 tbsp baking powder 1 cup crushed pineapple 3/4 tsp baking soda 1/2 cup coconut, flaked 1/2 tsp salt 1/2 cup milk 3 eggs 3/4 cup chopped nuts 1/2 cup oil Sift the flour, baking powder, baking soda and salt. Set aside. Beat the eggs until thick, Combine the oil, honey, undrained pineapple, coconut and milk. Add to the eggs and mix well. Mix with the dry ingredients. Fold in the nuts. Bake for 1 hour. Reduce heat to 325 and bake 15 min longer. |
