Macaroni Cheese

What you will need:
1½ cups of macaroni elbows (or any other type of past you’d like)
½ a teaspoon of dry mustard
2 cups of grated cheese
2 cups of milk (low fat or full it's up to you)
50g butter
2 slices of ham or bacon, diced (optional)
1 small onion, finely chopped
¼ cup of standard grade flour salt and freshly ground black pepper

What to do:
1.Cook macaroni according to instructions on packet. While this is cooking, make the cheese sauce (otherwise it won’t be thick enough when the pasta is cooked).

To make the cheese sauce:
1. Melt butter in saucepan
2. Add flour and stir constantly for 2 minutes.
3. Remove from heat
4. Gradually add milk and mustard powder, stirring constantly.
5. Return to heat and stir until sauce thickens and comes to boil.
6. Season with salt and pepper to taste
7. Remove from oven, top with sour cream if you like it, and enjoy.
8. Remove from heat and stir in half of the cheese and ham. If you leave it on the stove top over the element, the cheese will get too hot and separate, ruining your sauce.

To finish off:
1. Add Macaroni to sauce mixture, stirring to combine.
2. Pour into an ovenproof dish, sprinkle over the remaining cheese.
3. Cook at 190 degrees Celsius for 20 minutes or until golden and heated through.
