Spiced Flank Steak
3/4 t cinnamon
3/4 t ground corriander
3/4 t ground cumin
3/4 t ground black pepper
1 t salt
1 lb flank steak
  1. In a small bowl stir together spices and salt and rub on both sides of steak.
  2. Marinate steak in fridge at least one hour
  3. Grill 5-6" over coals until done

Grandmother White's Meatloaf
1 egg, beaten
1/4 C warm milk
1/8 t sage
1/8 t pepper
1/2 t salt
2 T chopped celery
2 T chopped onion
2 slices bread
1 lb ground beef
2 t worcestershire sauce
1/2 C cornflake crumbs
1/4 C chili sauce
1/2 C boiling water
  1. pre heat oven to 350
  2. mix milk, egg, worcestershire sauce and seasonings. Cube bread and soak in mixture
  3. add ground beef, onion and celery
  4. form into a loaf
  5. roll loaf in cornflake crumbs and spread with chili sauce
  6. place in pan and pour boiling water around
  7. bake uncovered for 1 hour

Flank Steak with Chimchurri Sauce
1 1/2 lb flank steak
4 cloves garlic
1 C vegetable oil
1/2 C white wine vinegar
1/2 C lemon juice
1/4 C snipped parsley
1 t crushed red pepper
  1. Cut across the meat to a depth of 1/2" in a criss-cross pattern and place in a ziplock bag
  2. Mix all other ingredients and add 1/2 to bag
  3. Let meat marinate in the fridge up to 24 hours.
  4. Remove from bag and grill 4-5" from heat brushing with fresh sauce until done.
  5. Serve with reserved sauce.

Korean Barbecued Beef
1 lb boneless beef top loin or sirloin
1/2 C soy sauce
3 T sugar
2 T sesame or vegetable oil
1/4 t pepper
3 green onions sliced thinly
2 cloves garlic minced
  1. Cut beef across grain into 1/8" slices.
  2. Mix remaining ingredients in a zip lock back and add beef
  3. Marinate in the fridge 30 minutes.
  4. Remove beef from marinade and stirfry in a wok over medium heat until light brown. Server over rice.

Spicy Gilled Kabobs
2 t dried thyme
2 t dried oregano
2 t dried rosemary
1/2 t salt
1/2 t ground black pepper
1/4 t ground red pepper
3 lbs sirloin steaks
  1. Cut steaks into 1" cubes
  2. Crush together seasonings and coat beef cubes
  3. Marinate in fridge up to 2 hours
  4. Thread onto skewers and grill 5 min each side (alternate on skewers with veggies if you like)
