SCRAMBLED EGGS & TOMATOES
Ingredients: 6 eggs, well beaten 1 medium bell pepper, diced 1/2 medium onion, diced 4 TBS butter or margarine 1/2 lb of grated cheddar cheese 1 (14 ounce) can of diced tomatoes, drained & rinsed
Directions: Drain & rinse diced tomatoes. Melt butter in skillet. Saute peppers, onion, & tomatoes for 10 minutes. In the meantime, beat eggs well. Add eggs to skillet & scramble them for 10-15 minutes (until they are done the way you like them). Add cheese & put lid on skillet until cheese melts. Serves 2. |
