GLAZED CARROTS

4 T. butter
4 T. honey
2 T. fresh lemon juice       
Salt & Pepper to taste
3 cups chopped carrots (12 medium), cut in 1-inch pieces

Heat butter for 40 seconds in 3-quart casserole dish  suitable for microwave use. Stir in honey, lemon juice, & carrots. Cover with glass lid or plastic wrap. Cook 7 minutes. Stir mixture & cover again.  Cook 7 minutes longer, or until carrots are tender. Add salt & pepper. Cover & let stand 4 minutes before serving. Serves 6.
