"FRUIT & NUTS" CHICKEN SALAD
*This isn't your plain old everyday chicken salad. The fruit and nuts make this one you will remember.
2 C. diced, cooked Chicken (use white or dark meat, or a combination of the 2) 1 C. chopped Celery 1 C. Seedless Grapes, cut in half 1/2 C. chopped nuts (pecans, walnuts or almonds) 1 (11 oz.) can Mandarin Oranges, drained (optional) 1/2 C. Mayonnaise diced Onion (optional) Salt & Pepper to taste Lettuce Leaves (to serve salad on)
Combine the chicken, celery, grapes, nuts & oranges in a large bowl. Combine mayonnaise, onion, salt & pepper in a small bowl. Add to chicken mixture and stir gently. Spoon onto lettuce leaves. Serves 3 or 4. |
