CHOCOLATE SOUR CREAM CAKE

1 cup all-purpose flour
1 cup sugar
1 cup reduced-fat sour cream
1 egg
3 tablespoons unsweetened cocoa
1 teaspoon baking soda
1/4 teaspoon salt

Preheat the oven to 350 degrees F. Coat an 8-inch square baking dish with non-stick cooking spray. Combine all the ingredients in a large bowl. Beat until smooth and thoroughly combined. Pour the batter into the baking dish & bake for 30 to 35 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool slightly, then invert onto a wire rack to cool completely.  Servings 9 - 12 squares.
