From James Beard's "Beard on Food" - A french dessert with the unusal name "Clafouti and Cerises," - cerises are cherries. James Beard's recipe: 1/2 C. Butter 2/3 C. Sugar 3 Whole eggs 1 C. unsifted flour 1 Tbs. graited orange rind 1 tsp. vanilla 4 C. bing or lambert cherries, tossed with 2 Tbs. sugar. Cream butter and sugar. Add eggs, one at a time. Add flour, orange rind and vanilla. Butter 9-inch cake pan or springform. (Some recipes suggest using only glass or ceramic baking dishes.) Put some of the batter in baking dish to cover bottom, add the cherries, then pour rest of batter over the cherries. Bake at 400 degreesl for 5 minutes. Reduce heat to 375 degrees.
