Raspberry Balsamic Vinaigrette
Ingredients:
1/2 cup raspberry white balsamic vinegar
2 teaspoons olive oil
1 clove garlic, minced
3-4 basil leaves, sliced chiffonade-style
salt and pepper
1 packet of Equal

Mix all together and enjoy.
I was searching the vinegar shelves recently at Shoprite, looking for something new and exciting. I LOVE balsamic vinegar, put that on just about anything and I'm set. I saw a raspberry white balsamic vinegar and thought...I'm in heaven! Unfortunately it only comes in small, 8 oz. bottles. I'd buy a gallon if I could. Brought it home and cooked up this vinaigrette. It's great on salads, as a marinade for chicken, seafood or vegetables, vegetable dunk, you name it.

The best thing I made with this was marinated mushrooms. I quartered fresh mushrooms and placed them in the vinaigrette for a day or so. I couldn't get enough of them. Use plenty of fresh mushrooms, though, cause they really reduce down in the acidic bath.
About 4 servings, 1 point per serving
