Fish Tacos II
Ingredients:
3 ounces pollack (or other mild white fish)
dried or fresh chopped dill
cayenne pepper
fresh lime juice
2 low-fat 6" flour tortillas
1 tablespoon fat free shredded cheddar cheese
Newman's Own pineapple salsa
1 tablespoon light sour cream
romaine lettuce
arugula

Spray a broiler pan with cooking spray. Sprinkle fish with cayenne and dill and squeeze the lime juice over the fish. Place on the pan and broil a couple inches from the heat for 4 minutes on one side, turn and broil one more minute or until fish flakes easily.

Place the fish on a tortilla, and sprinkle with the cheese. Spoon salsa over the fish and dollop with the sour cream. Place the lettuce and arugula over the fish, then roll up or fold in half and eat taco-style.
Here's another recipe for fish tacos that I threw together one night. VERY quick and VERY easy.
