| East Meets West Chicken with Pasta |
| Ingredients: 2 chicken leg quarters 2 zucchini, sliced thickly 6 ounces mushrooms, sliced thickly 1/2 onion, chopped roughly 2 cloves garlic, minced 1/2 cup Newman's Own pineapple salsa 1/2 teaspoon Thai red curry paste 2 cups angel hair pasta Cook angel hair pasta according to package directions; drain and rinse. Keep warm. Cook the chicken legs over medium to medium-high heat. Remove when almost done, let cool slightly, separate into legs and thighs, pull skin off and rinse remaining fat from pieces under warm water. Set aside. Pour chicken grease from skillet. In same skillet, saute zucchini, mushrooms and onions, let brown slightly, add garlic and saute a few minutes. Add salsa and curry paste, return chicken to pan, cover and cook approximately 10 more minutes until chicken is fully cooked. Plate pasta on bowl, place two pieces of chicken and vegetables over pasta and enjoy. |
| This is the result of NO IDEA what to cook one night and perusing the refrigerator to see what treasures it would reveal. Very tasty. Bulk up on the vegetables, add more if you want to make it a very substantial meal for zero extra points. Even with the recommended amount, though, it's PLENTY. Careful with the curry paste...it's potent! |
