| Chicken and Mushroom Pasta 7 OZ uncooked spaghetti 2 cups sliced mushrooms 1 cup each of zucchini squash and crookneck squash 2 tablespoons margerine or butter 1-3 cloves of garlic-diced 1 cup cooked chicken 2 Tblsp flour 2 tablespoons lemon juice 1/2 tsp each salt and pepper 2 cups milk Cook spaghetti , drain and set aside. In a 3 quart sauce pan cook and stir mushrooms and garlic in butter or margerine , add squash about half way through and continue to cook until tender, set aside and using same sauce pan stir flour, lemon juice, salt and pepper. Cook over low heat stirring constantly until smooth and bubbly; remove from heat. Gradually stir in milk. Heat to boiling stirring constantly. Boil and stir 1 minute. Stir in chicken, mushrooms and squash then add the spaghetti. Garnish with chopped parsley. Serves 4 |
