Misc Brewers/Aerated Water Manufacturers
The first brewers licence was issued to J. & E. Barnes in 1879.
The following year separate licences were issued to Michael McTherney and Patrick McCormack.

W.S. Eaton / T.J. Webster 1877 - 1883

A reference to these two names in the local paper of 1877 states:
'The township had an aerated water factory - W.S Eaton, later T.J. Webster'

Duhigg & Griffen 1879 - 1883?
Very little information exists on this business other than a reference in 1879:
'Duhigg & Griffen's lemonade and cordial factory began in Cooper Street.'

Burton's Brewery 1881 - 1883
Burton's Brewery, located about the corner of the present day Richards and Lawrence Streets was opened at the beginning of September 1881.   Standing on four acres of land and owned by Mary Jane Rochester, Henry Morton and Frederick Henry Jackson, the brewery was erected on four storeys, with a flat roof holding tank reservoirs of water pumped up from a nearby well.   The official opening was conducted by Mrs John Barnes.
A bullock was roasted and the town bank played for a crowd of between three and four hundred which attended despite the counter attraction of a horse stealling trial at the Court House..

Pund & Rankin  1883 - 1894
Messrs Pund & Rankin succeeded to Webster's cordial business in April 1883 and renamed it the Excelsior Aerated Water and Cordial Factory.

During 1888 Thomas Rankin became the owner of the Cootamundra Brewery, as it was then known.  A 1888 newspaper mentions the introduction of a 'new first class ale' by Rankin's Brewery and Cordial Factory.   Rankin sold the brewery the following year to the partnership of W. Jones & T.F. Lincoln, who controlled several breweries in other country towns.   William Jones sold his share in the business in 1894, and the company then traded as McIntyre, Lincoln & Co.

Duhigg & Keating 188? - ????
Obviously the partnership between Duhigg and Griffen was disolved between 1879 and 1886.   The only reference to this new partnership was in a newspaper report of 1886 stating:
'Aerated waters' cost 1/6d per dozen from Duhigg and Keating, Pund & Rankin and R. Resch.

(Bottles are known for Resch - but not Duhigg & Keating nor Pund & Rankin
